Roasted Garlic, Cauliflower and Mushroom Quinoa

I made this the other day to take for lunches.  I didn't take a photo until I was halfway through eating it ... sorry!

I had found this recipe on pinterest.  But ... I was tasting as I went along and I decided that it didn't need the balsalmic dressing and goats cheese ... it was nice just like it was.  And even better the next day after the flavours had developed over night!

Here's what I did:

1 head of cauliflower, broken into small florets
a few cloves of garlic, cut into slivers
mushrooms, button and oyster, quartered
1 cup quinoa
1.5 cups water
1 chicken stock cube 
thyme
salt and pepper
olive oil

Preheat oven to 400F/200C

Toss the cauliflower, garlic and mushrooms in olive oil.  Add salt and pepper and thyme.  Mix.  Bake for about 20 minutes, or until starting to brown.  Don't let them burn!  Stir half way through ...

While the veggies are cooking, make the quinoa.  Place quinoa in a small pot with the water and the chicken stock cube (break it up and stir it in) (or just use ready made chicken stock/broth) Bring to the boil.  Reduce heat, cover and let simmer ... about 15 minutes or until water is absorbed.  Fluff up quinoa with a fork and let sit til veg is ready.

When veg is ready, mix into quinoa.  

Easy.

And like I said, delicious the next day too!

Mushroom Quesadilla

This was a great way to use the leftover mushrooms from our burgers the other night ...

I just grabbed a flour tortilla, spread mushrooms on half of it.  Topped the mushrooms with thinly sliced Gruyere cheese.  Threw that all under the grill (broiler) for a couple of minutes til the cheese melted.  Folded over the tortilla and that's it.

I loved every bite of it.

I can't wait til the next time we have those mushroom burgers so that I can make this again!

Burgers with Mushrooms and Spicy Ketchup

These burgers were fabulous.  

We used our normal burger meat, with an aged white cheddar cheese.
But then we topped it with these delicious mushrooms, 
a chipotle ketchup and kewpie mayo!

Served on turkish buns, spread with butter, sprinkled
with season all and then toasted on the BBQ.

So ... I got the idea from this Food Network recipe .... 

I did my mushrooms like this:
5 punnets of mushrooms.  (I used shitake, button, swiss brown, enoki and shimeji)
fresh parsley and thyme, chopped
1 tablespoon butter
2 tablespoons olive oil
Salt

Slice mushrooms.  Heat the butter and olive oil in a large pan.  Add mushrooms and a pinch of salt.  Saute to desired tenderness.   Stir in parsley and thyme.   They were pretty juicy, but it didn't matter.  We just used a slotted spoon to scoop them out of the pan.

And the chipotle ketchup:
I used the leftover homemade ketchup.  There was about 1 cup of it.  Add to that some chipotle in adobo that I pulled out of the freezer.  Maybe 3 tablespoons ... but it was pretty spicy, I'd maybe only do 2 tablespoons next time.  Salt.  Pepper.  Zoop Zoop with the stick blender and that's it. 

So ... to assemble to burger.

Bacon Salad. With Bacon.

So, the other night, Ellie was cooking a putanesca (not this one but if you want to try one, this is a good one to try) for dinner.  I was tasked with making a salad.  Ryan had seen a salad he wanted to try that was topped with bacon and pumpkin seeds.  Turns out the salad he was thinking about was actually a soup so we never did find a recipe.  No biggie though.  I threw this little beauty together and it was DELICIOUS!

There aren't really measurements ... it's a salad.

Bacon, however much you like.
Red Onion
Garlic, I think I used about eight cloves
Spinach
Avocado
Mushrooms
Mixed seeds (my mix was pumpkin, sunflower and pine nut)
Fresh Parmesan cheese

Dry toast the seeds in a small frying pan until just brown.  Just enough for a topping.  You don't see my seed topping in the photo because we had to change platters while we were assembling the salad so my seeds are actually on the bottom!  Anyway ... set the seeds aside.

Chop bacon, dice onion, sliver the garlic and saute together.   While that is cooking, slice the mushrooms and add to bacon mixture when it's just about done.

On a large platter, lay spinach.  Top with bacon mixture.  Chop avocado and lay on top of salad.  Sprinkle with seeds and grate parmesan cheese on top.

I didn't add any dressing. 

I like to think that the bacon was the dressing. 

But, you could add dressing if you like ...

Jaylen's Gnocchi & Craig's Bacon Mushroom Sauce


This is the yummiest gnocchi.
Our friend Jaylen taught us how to make it.

His dad taught us how to make the bacon mushroom sauce that goes on top.
This last time we made it, we also topped it with the Winter Veg Sauce ....

You will need:

500g fresh ricotta cheese
150g pecorino romano cheese
1 egg, lightly beaten
1/4 tsp ground nutmeg
2 cups flour

Mix the first 4 ingredients and 1/4 cup of the flour.  Season with whatever you like.  Mix into a soft dough.  Add the remaining 1 & 3/4 cups flour and incorporate to make a stiff dough.  Separate dough into 4 pieces and roll them into big long logs.  Cut each log into pieces and then roll the gnocchi using a gnocchi board or the back of a fork.  The gnocchi board is a hundred times easier and they are cheap. (I think I paid $10 for mine, including shipping !)

While you are rolling, boil your water.  Once boiled, add gnocchi.  It will rise to the top when it's done.  Scoop it out and keep cooking in batches til they are all done.  That's it !  Top with whatever sauce you like.  (I'll give you a great recipe below ...) And some more of the pecorino romano cheese !

 

 Craig's Bacon Mushroom Sauce
(the way I did it)

1 onion, diced
Garlic, as little or as much as you like, diced
Mushrooms, sliced
Bacon,  250g, sliced
Chicken stock, 1 cup
White Wine, 1 cup
Cream, a cup or two ... 
Fresh Basil, chopped

Fry those first four ingredients together with a little bit of olive oil.  Add chicken stock.  Reduce.  Add wine and basil.  Reduce.  Add cream.  Stir and cook til thickened. 



Eggplant Burgers


Look, I know the photo leaves a little something to be desired but I'm going to make myself a light box ... hopefully on the weekend ... and then I'll be able to take good food photos at night !

But ... don't let the photo deter you from trying this ! I loved this. My kids loved this. My husband loved all but the eggplant.

And it was easy. Easy peasy.

Eggplant, sliced into 1/2 inch slices. Salted and set aside.
Tomato, sliced
Mushrooms, sauteed with a bit of garlic powder

I started with the caramelized onion.  When that was about done, my husband grilled the eggplant and burger patties.  I sauteed the mushrooms.

To assemble ... eggplant, burger, tomato, mushrooms, onions ... the kids added cheese to theirs.  I had ketchup.  Rory had sweet chili sauce.  Jono has those two and BBQ sauce !

Chicken-Mushroom-Green bean Stir Fry




Chicken-Mushroom-Green bean Stir Fry

1 whole roasted chicken (minus skin) - pulled off the bone
Enough of the following to feed your family:
Red bell pepper
Mushrooms (we usually use baby bellas)
Fresh French green beans (or you can use frozen...we like the fresh better, but the frozen were yummy too)
Sesame seeds

Garlic Powder
Soy sauce
Peanut oil (the original recipe called for olive oil, so either one or your go to oil would work fine)


Cut veggies to desired size.
Sautee veggies in soy sauce and oil until desired tenderness. (we usually add the juice left from the roasted chicken and additional water or chicken broth if needed) When the veggies are about half cooked (not an exact science) I add in garlic powder to taste. We like garlic around here...so I am rather generous with it.
Mix in chicken. Heat.
Toss in sesame seeds.
Serve.

Baked Potato Bowls



So ... I saw this recipe and wanted to try it. I didn't make it quite the same way, mainly because I forgot the bacon. How I did THAT, I don't know ! I cooked them anyway, and they were good but they will be so much better next time when I add the bacon. I changed a little bit about mine ... here's how I did them.

1 large potato per person, (and I of course did extra's for lunches the next day)
1 egg per potato
bacon, cooked and diced (probably one piece per 2 potatoes)
shredded cheese
fresh herbs, optional
salt and pepper

Bake the potatoes. Lay the baked potato on its side, and cut off the top of the potato. Scoop out the insides to make a “bowl", (I didn't know what to do with these innards last time but next time I'll be planning gnocchi for the following evening !) Break and egg into each bowl. Top with bacon, cheese, fresh herbs, and season with salt and pepper.

Bake at 350F/180C for 20-25 minutes, or until the egg whites are set. Serve immediately.

I topped the 'potato tops' with cheese and made potato skins. Yum !

And

I served these with sauteed mushrooms and onions, corn on the cob and a green salad.
Just realized that since I forgot the bacon, this was a totally vegetarian meal.


my birthday dinner ....

it was my birthday a couple of days ago.

my husband planned the most amazing surprise !

you can read about the whole day over on my simple beauty blog but

i'm just going to cut and paste and share the food bits of the story for you here ...

let's start with ... my neighbors coming over with birthday cocktails

i love having neighbors who are such a bit part of our lives !



when rory gets home, he says

'would you be totally disappointed if i told you i've made a reservation for us at a restaurant ?'

ummmm ... let me think about this for a minute ?!

i still don't have to cook ?

i get to go out ?

yeah ... i'm good !

rory got a phone call just as we were ready to leave, from our friend craig

he said 'we've got a present for bonnie,

would you guys swing by and pick it up on your way to dinner ?'

up until that phone call, i had NO IDEA anything suspicious might be happening

after that ... i wondered if all wasn't as it appeared !

but ... i had NO IDEA of the amazing surprise that lay in wait for me

weeks of planning, international conversations, importing of food

so ... we get to C & J's place to 'pick up the present'

and the house is all decorated

and something smells incredible ... (and very familiar)

and then there were shouts of surprise and the faces of other friends i love

rory hands me an envelope and says

'this is my present to you'

inside the envelope is this menu .........



the foods of my childhood !

and VONGOLE !

(my requested birthday dinner every year since we had lived in Italy !)

now ... this is no easy feat ... because in my little girls mind, the vongole (clams)

HAVE TO BE IN THEIR SHELL

well ... you can't get that here ...

in fact, you can't get clams here at all, unless they are in a can

so Rory IMPORTED them from New Zealand

can you believe that ?!



the food was amazing.

APPARENTLY, they had been cooking all afternoon ... I thought Rory was 'working late' !

Here's the Patatas Alioli and the Champinones Al Ajillo con pan (with bread), of course.



And then came the never ending supply of Gambas Al Ajillo ... OH YUM !!

Do you know one thing I loved about this night ?

There were so many things I loved ... but here's just one.

I loved that I was the only known clam lover of the bunch but they still cooked this for me !

And (almost) everyone tried the clams ! Some even liked them !

All of these dishes were new to everyone besides me and Rory, and everyone tried them !

And again ... liked (and even loved) them !

I love the adventurous nature of this group of friends !

And I love that they love to celebrate life.

Cheesecake.

When we were little, it was tradition in our house that all birthday cakes had to be chocolate.

So ... we have gazillions of birthday pictures of us COVERED IN CHOCOLATE !

BUT, once we were old enough to request our own birthday cake preference ... mine was

ALWAYS cheesecake (with cherries on top) !

My sweet friend Donna recently learned this about me and though she had never made one

before, she baked me the most wonderful birthday cheesecake ! with berries ! oh my !



and Jodie made cupcakes

that I have yet to try

but some came home with us and I will be having one for breakfast !



I was crowned 'birthday queen' and actually wore my 'crown' for a good hour.

Not the mask though ... it was way too hot for that !



Spoiled ? Yeah ... I can't disagree.



I have an amazing, thoughtful, selfless husband,

kind, encouraging and giving children,

enthusiastic, creative and (SNEAKY!!) friends,

an extended family like none other,

friends all over the world (thanks to the Navy and now facebook !) that i love

AND

to top it all off ....

I cannot wait for you all to see it !

Easy Peasy Quiche



Years ago, a friend of mine gave me this recipe. It's such a good recipe because you can pretty much throw anything in it !

Mix together:
3 eggs
1/2 cup self raising flour
1 & 1/2 cups milk
1 cup grated cheese
1 cup filling (whatever you like)

Throw it all in a quiche dish and bake in the oven. I did mine on 180 and I think it took about 30 minutes but play with it. Next time I make one, I'll make note of how long it took ...

The one pictured here was really nice.

I cooked up a bit of bacon, onion and garlic. Once that was cooked, I threw in some white wine. I didn't measure, just poured it in. Maybe 1/4 of a cup ? I reduced that til there was no liquid left. Chopped up a handful of mushrooms and threw them in. I also had some leftover chicken so I chopped that up and threw it in. I had a little square of cream cheese that needed to be used. I melted that in with the bacon once it was cooked. I added a bit of salt and pepper too. I thought about adding some fresh herbs but in the end I didn't. Maybe it was raining and I didn't feel like going out to the garden ?

Anyway ... this is a great dish to get creative with. You really can't stuff it up ! Just make sure you don't add too much extra liquid !

Sesame Seed Bun

Very simply ... make your burgers. We always BBQ ours. Top with cheese (while still on the BBQ) While the burgers are cooking, caramelize your onions, cook your bacon and sautee your mushooms. While those are cooking, get the rest of your stuff ready. Make the Aoili, pull apart the lettuce, grab a few sprigs of rosemary from the garden.

Once everything is cooked, you just need to assemble, serve and figure out how to fit that big ole burger into your mouth ! You'll be glad you did though ... this is ONE TASTY BURGER !!



Raw Lasagna on Big Honkin' Mushrooms

These were so yummy. I have done this raw lasagna as a dip before but wanted to do it as part of a main meal. This worked really well. I just got some humongous portatbello mushrooms, grilled them in my sandwich press right before we were ready to eat, spooned to (already prepared a few hours earlier) lasagna onto the top. EASY ! YUMMY !





1/2 a zucchini, finely sliced
2 cups tightly packed fresh spinach, processed til finely chopped
1/2 cup avocado, mashed
AND
1 ripe tomato, seed and chop (1/2 cup)
1/2 cup homemade sun dried tomatoes
1/2 cup red bell pepper
2 tbls olive oil
1 tsp oregano
1 tsp basil
1 clove garlic
1/2 tsp salt
--
Process everything under the AND ... til smooth.
--
Layer zucchini, spinach, avocado, tomato sauce. Do a few layers. I think I got three in a rectangular tupperware and four or five in a square tupperware ... It's best if you leave it set a few hours in the fridge before you eat it. The flavors really develop !

Salad Sandwiches


A great Aussie sandwich ... not something I'd eaten many of before moving here.
(a sandwich with only salad fixins ... I've had plenty of other sorts of sandwiches!)



This one had leftover Artichoke and Cumin Dip, Tomato,
Cucumber, Sliced Beets, Sliced Mushrooms, Pine Nuts and Fresh Spinach !

It was delish !




And here's Alia whipping up her Salad Sandwich ...
she and Jono both opted out of mushrooms, and beets !
But they both had pine nuts which was a pleasant surprise !!

Yummo Spinach Salad


I can't believe I didn't get a good photo of this salad on it's own.
It is so good ! I can't wait for you all to try it and tell me what you think !!
It's a Pioneer Woman recipe ... they are ALWAYS good !!

Here's how I did it ...

Pioneer Woman’s Spinach Salad - the Bonnie Way.

3 eggs
bacon - how ever much you like
1 small red onion (or 1/2 large onion)
1 package white button mushrooms (about 12 mushrooms), sliced
8 ounces baby spinach, washed, dried, and large stems removed
3 tablespoons red wine vinegar
2 teaspoons sugar
1/2 teaspoon Dijon mustard
Dash of salt

Make hard boiled eggs. Set aside.

Fry bacon to desired crispiness. Add onions and mushrooms.

Make hot bacon dressing: Add 3 tablespoons bacon grease, vinegar, sugar, and Dijon to a small saucepan or skillet over medium-low heat. Whisk mixture together and heat thoroughly. Now ... I didn't have anywhere near that much bacon grease in my pan. I had very little in fact because I was using Australian, not American bacon !! I just added a bit of olive oil to the pan that I cooked everything in and then followed the same instructions as above ...

Add spinach to a large bowl. Arrange onions, mushrooms, and bacon on top. Pour hot dressing over the top; toss to combine.

Arrange sliced eggs over the top and serve.

DELICIOUS !!!

I served this with Quinoa Crusted Chicken Fingers. That recipe coming soon ...

Mushroom and Zucchini Risoni

I got this recipe off the back of the box of Risoni ... and served it with broiled tomatoes.

Here's what you need:

Olive Oil
100g Pancetta, sliced
1 TBLS butter
2 cloves garlic, crushed
Zucchini ( I used 1/2 a large one), sliced
200g button mushrooms, sliced
1/4 cup white wine, I used an Unwooded Chardonnay
1/2 bunch spring onions, finely sliced
salt and pepper
2 and 1/2 cups risoni (orzo)

Cook risoni.

Meanwhile, saute pancetta in olive oil slowly ... til crisp and golden. Remove from heat and set aside.

Using the frying pan from the pancetta, add butter and garlic. Saute. Add zucchini and mushrooms. Cook and stir til tender. Add wine, and spring onion. Season with salt and pepper. Return pancetta to pan. Add risoni. Stir to combine. Serve immediately.

Serves 4-6

We topped with freshly grated parmesan cheese.

Wait a minute ... I just remembered there are leftovers !! My tummy has been asking me for lunch for an hour now .... I'm off to finish this up !!!

Champinones Al Ajillo aka "Garlic Mushrooms"

I am posting this recipe since I took the photos and wanted to post the recipes, but my cousin Pam did all the leg work, typing and emailing them to me since I forgot to copy them while we were there !

Champinones Al Ajillo


3 Tablespoons olive oil
1/2 pound mushrooms, stems trimmed, brushed clean, whole if very small, or cut in 1/4-inch thick slices
4 cloves garlic, peeled and thinly sliced ~ We definitely do more !!
2 teaspoons fresh lemon juice
2 Tablespoons dry (fino) Spanish sherry
1/4 cup chicken broth
1/2 teaspoon paprika, preferably Spanish style
1/4 teaspoon crushed red pepper
Salt
Freshly ground pepper
1 Tablespoon minced parsley

Heat the oil in a skillet until very hot and stir fry the mushrooms and garlic over high heat for about 2 minutes (I've found that the mushrooms soak up the oil very quickly, so I usually add a bit more). Lower the heat and stir in the lemon juice, sherry, broth, paprika, red pepper, salt, and pepper. Simmer a minute or two (may be prepared ahead and reheated right before eating), sprinkle with parsley and serve.

Orzo Veg Salad

I got the original recipe for this from
"Moosewood Restaurants Low Fat Favorites"
... a cookbook I'd love to own.

I've modified the recipe and am posting that modified recipe here.
(if you want the original ... get the book !)

1 package of Orzo pasta (called Rissoni in Australia)
1 tble sesame oil
1 cup chopped red bell peppers (red capsicum)
3 spring onions, thinly sliced
grape or cherry tomatoes
mushrooms

Cook the orzo, til al dente. Drain. Rince with cold water. Toss with sesame oil and set aside. (I've just realized I didn't do that !! -- oops)

Chop all the veggies and add to the salad.

Top with this dressing :

3 tablespoons rice vinegar
3 tablespoons soy sauce
1 teaspoon Chinese chili paste (I used Korean chili paste as I didn't have Chinese)
1 tablespoon grated fresh ginger root (I used the stuff out of a jar)
2 garlic cloves, pressed or minced (again, I used the stuff out of a jar)
salt and ground pepper to taste

Serve hot or cold. Delicious both ways !!!

As promised ... here are the two recipes for the yummy meal we had Sunday night.

They are both from The Inspired Vegetarian by Christine Ingram

I served them as the main dishes ... not eating meat right now.

Stuffed Mushrooms ( the adapted by Bonnie version )

I used:
6 big mushrooms
olive oil
garlic
fresh parsley
fresh breadcrumbs
salt and pepper

Preheat oven to 180C or 350F

Take the stalks out of the mushrooms. Don't throw them out. Put the mushrooms in a pan with baking paper on the bottom.

Heat a bit of oil and briefly fry the garlic. It called for 2 cloves, use what you fancy.

In a bowl, mix the breadcrumbs (I used two pieces of bread ... chopped in my food processor), parsley (3 tbls), and chopped mushroom stalks. Add garlic, salt and pepper and 1 tbls oil.

Fill mushrooms with mixture. I then poured a bit more oil on top as it seemed a bit too dry.

Cover with baking paper. Bake 15/20 minutes ~ depending on size of mushrooms.

Remove paper at last five minutes to brown the tops ... I also added a bit of feta cheese before I put them back in for these last five minutes !

Italian Roast Peppers

4 small red peppers, halved, cored and seeded
2-3 tbls capers ~ I used baby capers so I didn't need to chop as the recipe called for
10 - 12 black olives, pitted and chopped
garlic, finely chopped
50 - 75 g mozarella
25 - 50 g fresh breadcrumbs ( I used two pieces of bread )
1/2 cup white wine
3 tbls olive oil
1 tsp finely chopped fresh mint
1 tsp chopped fresh parsley
freshly ground black pepper

Preheat oven to 180 C / 375 F.

Place the peppers tightly in a dish - lined with baking paper of course.

In a bowl, mix capers, olives, garlic, mozzarella and breadcrumbs. Pour onto the peppers.

Pour wine and olive oil (I mixed them first) on top.

Sprinkle with herbs and pepper.

Bake 30 - 40 minutes until the topping is crisp and golden brown.

I checked mine after 20 minutes and it was already crisp and golden brown but the peppers weren't cooked. So .. I covered it with tin foil for the remainder of the cooking time ! I might start out with the tin foil on top next time and then take it off towards the end !

A Bonnie Original

Tonight, Rory is out ... hence all the posting !!
I hate cooking dinner twice when he is out so tonight I decided
to make something that I could feed the kids earlier
and Rory and I could eat once he gets home.
~
I also decided I needed to do a "throw together" meal since I didn't
want to go buy anything and the meal I had planned for
tonight will be better saved for another night. It's a BBQ cooked one
and it's raining and besides that, I don't even know how to
turn the BBQ on, let alone cook on it !!
~
Here's what I dug out of the pantry and fridge to work with.

Here's how I made it.
Use your own measurments.
While the pasta is boiling:
Saute garlic, onion and red onion.
Add mushrooms.
Add diced tomatoes and tomato puree.
Add basil, oregano and parsley.
Add red wine.
Add brown sugar. (just a bit)
Add kalamata olives.
Bring to the boil.

I mixed the pasta in with the sauce.

I've got asparagus, garlic and cauliflower cut up and tossed with
a bit of oil in a tupperware. When Rory get's home I'll
roast them like this to go with the pasta.
Easy. Yummy.

Welcome to Shabbat



Welcome to Shabbat dinner!!


What a blessing it is, especially after a LONG, HARD, BUSY week (which is a rather good description of how our weeks went here in our house), to sit around a table, enjoy each others' company, and rest in God. Plus, EAT STEAK! :-)




To go with our steak, we made the Quinoa with Spinach and Mushrooms recipe - with a twist! We have a whole Costco bag of colored peppers in the fridge that need using, so we decided to throw one in. YUM!!! We sliced one orange pepper into thinnish slices and added it with the onions at the beginning. Turned out to be a yummy twist that I think ya'll should try!
