Pink Smoothies

 photo ACACEF00-F47E-4993-AEDD-ED4F1C17D7B9_zpsodixjla7.jpg

These were delicious!
I changed the original recipe a bit ... mainly I didn't add celery ... eww!
Here's what I did ...

1.5 cup water or coconut water (I used water)
1/2 a medium avocado, pitted
1 cup frozen strawberries
1/2 a medium raw beet, chopped
1/2 a lemon, juiced
1 tablespoon coconut oil

a handful of ice cubes

1 sweet apple cored and roughly chopped

Throw all ingredients into blender.  Blend.  I started with one cup of water and then added the other 1/2 cup as necessary to keep the blender moving ...

Fruit Salad a la Alia

Photobucket

The other night Alia (6) made this fruit salad for dessert. I helped her take the skin off the kiwifruit and I segmented the orange. She did EVERYTHING else on her own ! I was so impressed. I bought the neatest little gadget last time we went strawberry picking that helped her with slicing the strawberries ! I'll do a post on that little beauty soon ... but beware, you are all going to want one !

This fruit salad contains one punnet of strawberries, one orange, two kiwifruits and one banana. There are also red and green apples on the side so we could add whichever one we have a preference for ! Isn't she thoughtful ?? :)

Fresh Strawberries {& Shortcake}

We went strawberry picking the other day.
Fresh strawberries are so beautiful !
We ate them plain ... with frothed
milk "coffee" for the kids ...

As a topping for pancakes ...

And as a whole wheat strawberry shortcake ...
I found this recipe over at Heavenly Homemakers

1 1/3 cups whole wheat flour
1 t. baking powder
2 eggs
1/2 cup honey
1/3 cup coconut oil
1 t. vanilla extract
1/2 cup milk

Mix together flour and baking powder. Add in eggs, honey, coconut oil, vanilla and milk. Stir well. Pour into a lined meatloaf pan. Bake at 180°C for 20-25 minutes.

Cool. Top with fresh strawberries and whipped cream.

Strawberry Fantasticness !

This is another Annie Phyo recipe and it was so so so good !
I made this in a margarita glasses last night ... next time we're going to do them in shot glasses.
It was so rich ... you just don't need that much of it !!

Here's what you do ...

Blend 1 cup strawberries with 1/4 cup agave nectar.
Clean your blender.
Blend 1 cup cashews, 1 Tablespoon vanilla extract, 1/4 cup coconut oil and 1/4 cup water.
I sliced strawberries and put them in the bottom of each glass.
Then I added the cashew cream.
Then I added the strawberry/agave syrup.
Topped with more sliced strawberries.
Mmmmmmmmm !!

Strawberry Bread

A couple girls came over last Sunday for an afternoon of baking. We made three different kinds of bread: Strawberry, pumpkin, and cinnamon. They were all YUMMY, but I only have time to type up one of the recipes for now...so here is my favorite! (one of the college guys that came over after sledding to sample our baking proclaimed that the strawberry bread was "stupid good"...I think that is a good thing :-)

(the strawberry bread is the two loaves on the left and the one on the right is pumpkin)

Strawberry Bread
3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 – 10 oz packages of strawberries, thawed
(either get the sliced kind or I used whole ones and rough chopped them)
1 cup oil
4 eggs, well-beaten

Combine all dry ingredients; mix well. Make a well in the center, pour all liquids into the well and mix by hand with a wooden spoon (probably doesn’t matter what kind of spoon, I just prefer the wooden ones). The batter will seem to thick, but it will be soupier when you add the strawberries. Add strawberries. Grease and flour (I use sugar instead of flour) 2 – 8 by 4 loaf pans. (or a bunch of little loaf pans) Pour batter into pans. Bake at 350 for ~40 minutes. I let it cool in the pan because it's sometimes hard to get out until it is cooled a bit.
