Blueberry Pancakes



Jono (10) and I tag teamed the other morning for breakfast.  He made the pancakes ... entirely on his own !  (It took right on an hour ... !  but did I mention that my ten year old made pancakes ?  on his own ! from scratch !)

This is the pancake recipe he used ...

1 cup flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 egg, lightly beaten
1 tablespoon canola or vegetable oil

In a bowl, whisk together all ingredients til just mixed. A few small lumps is fine. Cook the pancakes using a 1/3 measuring cup to add the batter to the pan. You know how to cook pancakes right ? Depending on how hot your stove is, cook on a medium to low heat. Flip the pancake once the bubbles start popping ...

I made the blueberry sauce.  Easy.  Sweet.  But also Tart.  Delicious.
1 cup frozen blueberries
1/4 cup water
1/4 cup sugar
1 tablespoons fresh lemon juice
1 tablespoons cornstarch, mixed with 2 tablespoons cold water
1/4 teaspoon vanilla extract
1 tablespoon lemon zest


Over medium heat,  combine  blueberries, water, sugar and lemon juice. Stir frequently,  bring to a boil.  Slowly add cornstarch mixture.  Let thicken ... only took a couple minutes.  And it happened FAST!!  Stir in vanilla and lemon zest.  

All that's left to do is pour it on top of your pancakes !

Pancake AND Cinnamon Roll ???


As is becoming the norm, I found this recipe on Pinterest. I didn't do it quite the same as her though. I started too but it didn't work for me ... so, I did something different.  Here's what I did ...


For the Cinnamon ...
4 tbls melted butter
1/4 cup + 2 tablespoons packed brown sugar
1/2 tbls ground cinnamon

Stir ingredients together and set aside.

For the Glaze ...
4 tbls butter
2-ounces cream cheese, at room temperature
3/4 cup powdered (icing) sugar
1/2 tsp vanilla extract

Heat butter over low heat until melted. Add cream cheese and whisk until smooth. Add powdered sugar and vanilla extract. Mix until smooth and glaze like. Set aside.

You could use your favorite pancake recipe for this. I tried hers and quite liked them.

For the pancakes ...

I cooked them individually and served them on individual plates. As each pancake is cooked and plated, top with a spoonful of cinnamon mixture and then glaze. Swirl and serve.

We went strawberry picking the other day.

We ate them plain ... with frothed
milk "coffee" for the kids ...

I found this recipe over at Heavenly Homemakers


1 1/3 cups whole wheat flour
1 t. baking powder
2 eggs
1/2 cup honey
1/3 cup coconut oil
1 t. vanilla extract
1/2 cup milk

Mix together flour and baking powder. Add in eggs, honey, coconut oil, vanilla and milk. Stir well. Pour into a lined meatloaf pan. Bake at 180°C for 20-25 minutes.

Cool. Top with fresh strawberries and whipped cream.

I like to make mini pancakes for the kids lunches ... I put this insanely delicious fruit spread in between two of them and send 'pancake sandwiches' as a lunch box treat ... yum. I usually make myself a couple too ...

Here's how I make our pancakes these days ...

Add the following to a blender ...

1 &1/2 cups milk ... regular, skim, soy, almond, powdered ... doesn't matter. I've tried them all !
1 Tbs honey
2 Tbs olive oil
1 & 1/3 cup whole wheat flour (whole meal spelt flour is also good)
1 tsp baking powder
1/4 tsp salt
1 tsp pure vanilla extract

Blend.

Pour pancake size batter blobs into a heated frying pan ... when they bubble for a bit and the edges begin to go darker than the rest of the pancake, flip it ... Cook a couple more minutes and voila ... pancakes !

Another fun thing ... as if pancake sandwiches aren't fun enough ... is to pour your batter into a big jar and head down to the beach and BBQ your pancakes there for a beautiful Saturday morning breakfast !!

This was simple.
I just made pancakes as usual but once I poured the batter in the pan,
I dropped frozen blueberries into it ...
Flipped it once.
Voila !

I have NEVER been able to make good pancakes from scratch. NEVER. Until now ! Lauren at Vegan Yum Yum posted THIS recipe. Have you all been to check out her site ? Come on now, don't let the vegan part scare you off. She's got some great great great recipes ! She was also recently on the Martha Stewart show doing the cutest thing. I must mention how EASY this is ! You do it all in the blender ! And you can do it the night before ! I made a batch for me and the kids last night and then when Rory got home later, I made him a batch too. Kept the leftovers in the blender in the fridge and the kids had pancakes again for breakfast this morning !!

Easy Weekend Pancakes
Makes about 25 Silver Dollar Pancakes, enough for two people

1 1/2 Cup Soymilk (I have used normal milk too)
1 Tbs Sugar
2 Tbs Oil
1 Cup Spelt (or all-purpose*) Flour
1/3 Cup All-Purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
1 tsp Extract (any flavor, I used orange, but vanilla is a no-brainer)
1-2 Tbs water, to thin batter if needed

*If using only all-purpose flour for this recipe, you may need to add more liquid. Regular flour absorbs more moisture than spelt.

Add soymilk to your blender. Add remaining ingredients except the water and blend for a few seconds until combined. Scrape down any dry flour stuck to the side of the jar and blend again. Place the top on the blender and refrigerate overnight. You can also use the batter immediately.

In the morning, place the blender back on the base and add 1-2 Tbs of water, blend to mix. This re-thins the batter that had thickened overnight.

Pouring BatterPreheat oven to 200ยบ F, or the lowest setting, and put an oven-safe plate on the middle rack. Heat a non-stick skillet over medium heat for a few minutes. Pour the batter directly into the center of the UNgreased heated pan. I like silver dollar sized pancakes, 2 1/2 to 3″ in diameter, but you can make any size you want. This batter should create fairly thin pancakes.

After a few minutes of cooking, you’ll see the bubbles form and set on the uncooked side of the pancake. The batter will start to set, and it will change color from white to dull yellow. This is when you should flip. If your pancake isn’t brown by this time, turn your heat up. If it is overly brown, your heat is too high.While cooking the pancakes, place the finished ones directly into the oven on the plate. Stack the pancakes as you go. This will keep the whole stack warm while you’re cooking them.

And how I really eat pancakes. Sickly sweet ... not usually my forte. I'm more of a savory/salty girl but when it comes to pancakes and french toast, I want butter, powdered sugar and maple syrup ! The combination is divine. Add bacon to the mix and I might just jump for joy ! ( not very high though if it's AFTER I eat !! )


Soup and Oatmeal Pancake Recipes!

We has "soup" weather a few weeks ago so we had soup!! Two really good ones I wanted to share and then I'm posting a recipe my sister in law gave me for oatmeal brown sugar pancakes. They are DELICIOUS! My husband said he doesn't care if I never make the regular kind again.

First the pancakes.
I always double this recipe and we have a few left over for the next day.
(PANCAKE TIP FOR YOUNG CHILDREN We use a pizza cutter to cut up the kids pancakes. It makes quick and light work of it!! Once you've tried it you'll never go back :). )
Brown Sugar Oatmeal Pancakes













10 T. oats (I use the quick oats)
1/2 cup flour
1/2 cup wheat flour
1/2 tsp baking soda
1/2 tsp salt
1/3 cup packed brown sugar
1 egg
2 T. vegetable oil
1 cup buttermilk (I never have buttermilk so I just use milk)
(I usually add 1 T. of lemon juice - don't know why)


Mix all the dry ingredients together in a large bowl. Mix the egg, oil and milk together in a small bowl and then add to the dry ingredients. You may need to add a bit more milk to get the right consistency - so they aren't too thick to pour onto the griddle.


Spinach, Orzo and Chicken Soup














4 boneless, skinless chicken breasts cut in cubes
salt and pepper
2 T. olive oil
1 yellow onion chopped
2 garlic cloves minced
1 tsp ground coriander
pinch of cinnamon
32 oz. chicken broth (I think I just used 4 bullion cubes and added 4 cups water)
2/3 cup orzo pasta
1 T. fresh lemon juice
2 cups baby spinach
1/3 cup grated parmesan cheese
lemon wedges

Season chicken with salt and pepper. Heat Olive oil in 4 quart sauce pan over medium-high heat. Add chicken and sear until lightly browned; remove to plate. Reduce heat to medium, add onion and garlic, and saute until onion softens, about 5 minutes. Add spices and stir for one minute. Add broth and bring to a boil. Add orzo and cook until tender, 8-10 minutes. Add chicken, bring soup back to a boil and cook for 1 minute. Remove from heat and add lemon juice. Divide spinach among 6 bowls and ladle hot soup over spinach. Garnish with parmesan and lemon wedges.


This last recipe is one I got years ago from Top Secret Recipes. I subscribed to their emails years ago and from time to time one comes up that I really like. This has been my favorite. I don't have a picture of it - but I didn't want that to stop me from posting! This is their version of:

TGI Friday's Black Bean Soup

2 T. vegetable oil
3/4 cup diced white onion
3/4 cup diced celery
1/2 cup diced carrot
1/4 cup diced green bell pepper
2 T. minced garlic
4 15 oz. cans black beans
4 cups chicken stock (again I use chicken bullion cubes + water)
2 T. apple cider vinegar
2 tsp chili powder
1/2 tsp cayenne pepper (I never use this)
1/2 tsp cumin
1/2 tsp salt
1/4 tsp HICKORY flavored concentrated liquid smoke (A MUST!!!! yummmy)

Garnish
shredded cheddar/monterey jack cheese blend
chopped green onion

Heat oil in large saucepan over medium/low heat. Add onion, celery, carrot, bell pepper, and garlic to the oil and simmer slowly (or "sweat" as it's called), for 15 minutes or until tender. Don't brown the veggies. While you cook the veggies, pour the canned beans into a strainer and drain and rinse. Measure 3 cups of the drained and strained beans into a blender with 1 cup of chicken stock. Puree until smooth. When the veggies are ready pour the pureed beans, the whole beans, the rest of the chicken stock, and every other ingredient in the list to the pot. Bring to a boil, then reduce and simmer 50-60 minutes.

Some notes of my own :)
I never cook it as long as 50-60 minutes. I don't think it's necessary especially if the veggies are arlready tender. I don't like the veggies too soft!
Cooking it that long may help it to thicken but I've never been patient enough to wait that long. Sometimes I have tried to thicken it a tiny bit with a cornstarch mixture or more pureed beans.
