Fresh Strawberries {& Shortcake}

We went strawberry picking the other day.
Fresh strawberries are so beautiful !
We ate them plain ... with frothed
milk "coffee" for the kids ...

As a topping for pancakes ...

And as a whole wheat strawberry shortcake ...
I found this recipe over at Heavenly Homemakers


1 1/3 cups whole wheat flour
1 t. baking powder
2 eggs
1/2 cup honey
1/3 cup coconut oil
1 t. vanilla extract
1/2 cup milk

Mix together flour and baking powder. Add in eggs, honey, coconut oil, vanilla and milk. Stir well. Pour into a lined meatloaf pan. Bake at 180°C for 20-25 minutes.

Cool. Top with fresh strawberries and whipped cream.

what's the meatloaf pan lined with? please say it isn't meatloaf.

also, how heavy is this? i'd like to do more baking with whole wheat flour but i can never make it anything tastier than a doorstop. maybe it's the altitude!
