Seafood Pizza

I made this ages ago and never posted the recipe.
It was delicious. I'll make it again soon. Very simple recipe !!

Photobucket
All I did was mozzarella and gruyere cheese as the base. sliced red onion, garlic powder, capers, feta cheese and prawns (w/garlic and parsley) that I cooked for a minute in the fry pan before adding to the pizza. Top with a bit more Mozzarella and then into the oven at 200C. I use a thin crust ....

PS ... I made this up.

Bonnie Made The Ajiaco Soup !

And you all need to make it too !
This soup is so delicious !

I made it just like Andrea said ... with only a couple of changes.

I didn't use onion flakes, but rather, finely diced 1/2 an onion and sauteed with garlic.
I'm pretty sure I used a teesy bit more garlic than called for ...
And instead of adding the instant mashed potatoes
that, just for the record, contain about every
preservative in the book (!!), I used
a couple spoonfuls of whole
wheat flour ... it worked
just as well !!
YUM !

I can't wait til lunch ... leftovers !

Lemony Chicken and Israeli Couscous Salad Deliciousness

We had this tonight and I couldn't even wait til tomorrow to share it with you.

DE.LIC.IOUS with a capital D !!!
So freaking good !!
Even the kids were raving about this one !

I loosely followed a recipe from this book for this recipe ...

4 chicken breast fillets (this made enough for dinner and lunch !)
olive oil
salt and pepper
2 lemons, halved
2 cups Israeli couscous
2 tablespoons butter
2 tablespoons shredded lemon rind
2 tablespoons salted capers
dried parsley
1/2 cup slivered almonds

Brush the chicken with olive oil and sprinkle with salt and pepper. Cook in a hot, preheated grill pan (or on BBQ) til cooked through. Set aside. Place the lemons in the pan, (or on BBQ) cut side down and cook for 1 minute ... I cooked a bit longer.

Make the couscous according the package directions.

Heat butter in fry pan over medium/high heat. Add lemon rind, capers, parlsey and almonds and cook til almonds are slightly toasted. Add cooked couscous and toss to combine.

To serve, top couscous with chicken and grilled lemons. We squeezed the lemon juice from the lemons onto both the chicken and the couscous.

Mmmmmm ... I'm lickin' my chops just thinkin' about it !!
