Crock Pot Shredded Chicken


You know how sometimes a recipe calls for shredded chicken?
Well, this is a great way to make it.  
Easy.  Nothing to it.

I started with four skinless boneless chicken breasts. 
Took them frozen solid out of the freezer and popped them in the crock pot.
I added two cups of chicken stock to the crock pot as well.
Four hours on high and they were done.

Just shred with two forks and THAT IS IT.

We used some of this on pizza that night.
I froze the rest in ziplock bags.
Already, I've pulled out one bag and used it for an easy dinner.
Just threw some chicken, cheese, leftover guac, chipotle mayo into a flour tortilla
 and toasted that in the sandwich press.  The others in my 
family varied their ingredients a little.  
We were all happy.
Just the way 
I like it.



Chicken and Beans on Rice

This was delicious.  Easy too.  I found the recipe here.  I did what she did with minor alterations like, one less chicken breast because I always find these sorts of chicken dishes have to much chicken. I also added rice and toppings.  Oh, and I mixed all the stuff together before adding to crock pot ...

Anyway, here's my way ...

3 raw boneless, skinless chicken breasts
1 (400g/15oz) can of pinto beans, drained and rinsed
1 (400g/15oz) can of black beans, drained and rinsed
2 (400g/15oz) cans of diced tomatoes
frozen corn, I didn't measure ...
1 (340g/12oz) jar of salsa

to serve ...
avocado, chopped
grated cheese, i used a mexican blend
rice or tortillas or corn chips
sour cream or greek yoghurt (didn't have any in the house this time but will use next time)

Put chicken breasts in the bottom of the slow cooker (crock pot).

In a separate bowl, mix other ingredients.  I just added the corn til it seemed a reasonable amount. Pour over chicken.  Cook on low for 5-7 hours.  I did the full 7 hours then turned it on 'keep warm' til we were ready to eat a few hours later.  When I stirred the mixture up when we were ready to eat, the chicken just broke into pieces! 

Serve on top of rice, or in a tortilla or with corn chips.  Top with avocado, grated cheese and sour cream ...

This was a BIG HIT with the whole family ! And it made lots.  Our family of four ate it for diner one night & everyone had seconds.  Two of us are having it for lunch today.  And there is still enough for lunch tomorrow!

Homemade Sugar Free Crock Pot Apple Sauce !


This was so simple. So easy. And is so delicious.
I gave the kids a taste test and they immediately asked for a whole bowl !!



So ... here's what I did.

Ingredients:
4 Granny Smith Apples
6 Fuji Apples
8 Sundowner Apples
just under 1/2 cup of water
cinnamon

I used a combination of apples. Granny Smith because they cook well and add a nice texture. Fuji because they are my FAVORITE tasting apple. And Sundowner because they were cheap and the sign said they were sweet ... I'll bet you could use as many of any combination that you want and it would be delicious. Although, if you did ALL Granny Smith I think it might be a bit tart without the addition of sugar.

So, peel, core and quarter the apples. Actually ... you should core, peel and quarter them. I did them the other way (peeling first) and the apples were browning by the time I was ready to quarter them.



Throw 'em in the crock pot with the water and a sprinkle of cinnamon (to taste).

I turned mine on high for an hour and then turned it down to low. I checked after four hours on low, got a spoon in there and tried to scoop the bottom ones up to the top, and it was like I had used a potato masher on them. I just stirred them up, gave the kids a taste test and the rest ... well ... the rest is history.

I will make this time and time again. I'm so pleased !


Garlic Chicken Pasta

So ... this recipe starts out as a crock pot recipe. The original recipe that I found called for Lawry's Mesquite Marinade with Lime Juice. I can't get that so I made my own marinade.

My marinade ~ mix in a bowl :
1/4 cup olive oil
1/4 cup brown rice vinegar
1/8 cup red wine
garlic ~ to taste
lime juice and rind ~ one or two limes
honey
salt and pepper
paprika
liquid smoke
onion powder

I have no idea how much of each thing I used. When I make it again, I'll let you know exact measurements ...

Add to crock pot :
3 or 4 skinless, boneless chicken breasts
Marinade from above

Cook on low for 6 hours.

Other ingredients :
Whole wheat spirals pasta
1 cup thickened (heavy) whipping cream
2 or 3 garlic cloves, crushed
pepper, to taste
1/2 cup butter
500g bacon, chopped
1/2 cup grated parmesan cheese

Shred chicken, and set aside. When ready to prepare dinner, cook pasta. In large fry pan, cook bacon. Add butter and melt. Ad garlic, cream, pepper and parmesan cheese. Whisk together on low heat for 3-4 minutes. Add cooked pasta and shredded chicken. Stir. Top with extra parmesan.

Spaghetti Bolognaise in the Crock Pot

I've been making my spaghetti sauce like this for years ... but this is the first time I've let it simmer all day in the crock pot. I'll do it that way EVERYTIME now ... it was sooo good. So much more flavor infusion !!

I don't use exact measurements. I add how much I like and then adjust for taste !
500g (1lb) mince (ground beef)
1 onion, diced
garlic to your taste preference, chopped to your size preference
button mushrooms, sliced
kalamata olives
dry white sherry
brown sugar, maybe 1/2 a tablespoon
fresh oregano
fresh parsley
fresh basil
fresh chives
2 dried bay leaves
a few big cans of tomatoes
tomato paste
tomato puree
1 jar of Five Brothers Roasted Garlic Sauce (optional)

Start by sauteeing all the garlic and onions together. Add the mince (ground beef) and brown. throw the mushrooms in for the last couple of minutes. Put in crock pot and add all your cans of tomatoes, you sauce (if using) some tomato puree, and tomato paste. I just do it to a nice thick consistency ... Add herbs. I only chop the chives. The rest, I just pick off the stalks and throw 'em in. As you can see, I like it herby !! Add your kalamata olives. A bit of a weird ingredient but if you like olives you will probably love this ! It gives the sauce such a nice flavor !! Add your sherry and the brown sugar. (to take the edge of the acidity of all those tomatoes !! ) Cook on low all day !!

I filled my crock pot when I made this and it fed us for dinner, lunches the next day and I still have two big dinner with a lunch the next day portions that I froze for later !! I figure, if you're making it ... make lots ! It's minimal extra effort now for a great pull out of the freezer on a 'for whatever reason I can't cook tonight' night !!

40 Clove Garlic Chicken




I got this recipe from Coupons and Cooking. I didn't change any ingredients ...

2 kg chicken pieces
1 large onion, sliced
1 tablespoon olive oil
2 teaspoons sea salt
2 teaspoons paprika
1 teaspoon pepper
40 garlic cloves, peeled

Put your sliced onions on the bottom of the crock pot. Add chicken. Mix remaining ingredients in a bowl and pour on top of chicken. Mix with hands to coat. Do not add water. Cover and cook on low for 6-8 hours, or on high for 4-6.

Note from Bonnie ... I used chicken legs and chicken breast. The legs were great, the breast ... not so much. Too dry. I will just do legs, and maybe thighs next time.



I served this with yummy pumpkiny fritters and simple sesame asparagus.
