I can't believe I haven't posted this yet.

Swiss Cheese
Beef Patty (cheese and burger did two ... we only did one)
Sautéed Mushrooms
Caramelized Onions ... this was not part of the recipe but we decided they would be a good addition !!
Rosemary, fresh

Very simply ... make your burgers. We always BBQ ours. Top with cheese (while still on the BBQ) While the burgers are cooking, caramelize your onions, cook your bacon and sautee your mushooms. While those are cooking, get the rest of your stuff ready. Make the Aoili, pull apart the lettuce, grab a few sprigs of rosemary from the garden.

Once everything is cooked, you just need to assemble, serve and figure out how to fit that big ole burger into your mouth ! You'll be glad you did though ... this is ONE TASTY BURGER !!

What you need to make this beast ...

Beef Patty ... have you tried our beef patty's yet ? Rory is convinced they are the best on the planet. So, maybe you should.

Gouda Cheese
Fried Prosciutto
Sliced Turkey
Pesto Mayonnaise
Spinach
Oat Bread - we buttered ours and pressed it in the panini maker ...

So ... I made the pesto mayonnaise. It was easy and so delicious ... Just whip up some mayo using your stick blender. And then make some pesto ... like this ...

2 cups fresh basil leaves ~ I used greek basil
1/2 cup freshly grated Parmesan cheese
1/2 cup nice olive oil
1/3 cup pine nuts
garlic cloves, minced ~ to taste, I used a couple of cloves
Salt and Pepper

Mix basil, pine nuts and garlic in food processor. Slowly add the olive oil in a constant stream while the food processor is on. Add the grated cheese and keep going til blended. Add a pinch of salt and freshly ground black pepper to taste.

Makes 1 cup.

To make the pesto mayonnaise, just add some of this pesto to the mayo ...

DELICIOUS !!

We've got quite a list going of Cheese and Burger Society Burgers that we've tried now. There's The Boss, The Camelot, The Farmer John, The Firehouse (that we don't have a photo of), The Havana, The Aunt Millie, and of course, The Lumberjack. We've enjoyed all of them. Loved a couple of them and now ... with the Roadhouse, we've found our new favorite !

Man, this is good ! Just looking at the photos makes me want to go make one ! (and it is only 7am! )

Cheese and Buger Society ~ #10 ~ The Lumberjack

This burger is HUMONGOUS ... but so worth eating. I couldn't finish mine but I loved every bite I got in !!

Here's what's on it ...
Three pieces of white bread ... buttered and pressed in sandwich press
Iceberg lettuce
2 beef patties
1 piece swiss (we used jarlsburg) cheese
1 piece cheddar cheese
dill pickle slices
ketchup, mustard and mayo
diced onion

Just watch out ... you have to hold onto it with two hands ... otherwise this happens ...

The Havana and The Aunt Millie

Last night was Jono's turn to help cook. He wanted to do another Cheese and Burger Society burger. He chose #28 ~ The Havana and we also tried #8 ~ The Aunt Millie. Both were good but would have been much better had we had the right bread. Unfortunately, the bread I was trying to make, turned into a big fat fail ...

Here it is in it's new home ~ the garbage !!

But not to worry, Rory stopped at the store and grabbed a french loaf on his way home. Only problem, it was a bit hard. We pressed it in the sandwich press which made it a bit flatter but it was still too hard for a burger !!

As for the way we made these burgers ... we didn't do them EXACTLY like the C&BS ... you can check out their website if you want the EXACT recipe ... but we did ours like this ...

Menu Plan Monday - Bonnie - 14 June 2010

Menu Plan Monday is hosted by Laura at I'm an Organizing Junkie

I didn't make a menu plan last week ... and I didn't cook for eleven days ... weird ! Early Tuesday morning of last week, I got a call from my Mom letting me know that my Grandma had died. I was on a plane the next morning, flying from Australia to Ohio, USA ! I spent nine amazing days with various family members ... and three with my whole family, including both parents, all three siblings, all of my aunts, uncles and cousins on that side of the family.

It was just me who went. The kids stayed home with Rory. His Mum was here for a few days to help out but for a week, he was on his own. He wowed my facebook friends by posting photos of what he was cooking ! For those of you who missed it ...

I got back Saturday. I slept through dinner that night. Last night we did an easy throw together pasta and then today I planned my first menu and headed to the shops with Alia to get this weeks food ! It's lookin' pretty good ! Here's what we're having !

TONIGHT
It's Alia's night to pick the meal and help me cook.

Tonight, she and I will perfect it, take photos
and I'll post an unprocessed recipe this week !!!

TUESDAY
Spaghetti Bolognaise ~ my own recipe.
I'm going to let it simmer in my crock pot all day long ~ a little experiment.
I'll post the recipe for this one too !

WEDNESDAY
Jono picked Burgers from the Cheese and Burger Society !
He and Rory are going to try #28 The Havana.
Alia and I are going to try #8 The Aunt Millie.
We'll be doing two different breads.
Should be interesting.

We'll also do homemade onion rings on the side.

THURSDAY
Another Crock Pot Meal. A new one.
Garlic Chicken Farfalle ... I'm going to use spirals but Farfalle sound better.

FRIDAY
Lemon Grilled Chicken
Cauliflower and Broccoli

SATURDAY
Rosemary Chicken Pizza
Funky Lime Pizza

Cheese and Burger ~ The Camelot

You may remember a couple of weeks ago, we tried our first Cheese and Burger Society Burger ~ The Boss. That burger was the best burger I've ever eaten ! The other night we tried another one ~ The Camelot. It was not as good as the boss but still tasty. And I made it totally unprocessed which I was pretty pleased with !!

Here's the components ...

I used my basic beef patty recipe again. It's such a good one. Topped with camembert cheese.

I made whole wheat brioche rolls ... they were too thick for this burger but I'll change that for next time !!

I caramelized onions for the first time. It was super easy, time consuming, but easy and so stinkin' delicious. I used three red onions, sliced thin. A couple tablespoons of olive oil. Heat in big fry pan. Add onions. Stir occassionally but just let 'em cook for half hour or so ... 'til they are all brown and caramelly and did I mention stinkin' delicious ??

I used homemade mayo and dijon mustard. Sliced tomatoes. A few sliced mushrooms ... sauteed.

The original recipe had a peppered bacon as well. I'm sure that would have been yummy but we haven't found a bacon that fits our unprocessed specifications ...

Cheese and Burger ~ The Boss

This is the best burger I've ever eaten in my life ...

We got the 'recipe' from The Cheese and Burger Society.

It's #15 ... The Boss.

We had to make a few modifications ...

First ... we couldn't get asiago cheese so we used romano.

BEAUTIFUL substitute !

Second ... no rosemary ciabatta rolls ... we used turkish buns.

The recipe just calls for 'beef patty' ... we made ours using this recipe ... doubled it

and made HUGE burgers. Also ... added rosemary, thyme, and basil to the burger meat mix ...

So ... all you do is cook your burger ... we did ours on the Weber ... add the cheese

for the last couple of minutes so it melts ...

Then assemble ...

I started on the bottom bun and worked my way up like this ...

black olive tapenade

arugula (rocket) leaves

sliced tomato

sliced red onion

prosciutto
(make sure it's thinly sliced ... ours wasn't but it will be next time !)

I'll probably make the burgers a bit thinner next time ...

I couldn't finish mine ... lucky I have a growing boy to do that ...

Rory finished his but wishes he hadn't ...
