Parsley and Garlic Prawn Salad

This is such a quick, easy and yummy dinner.  And perfectly compliant if you are doing AIP.

I fill a bowl with chopped iceberg lettuce, chopped cucumber, and chopped avocado.
I sprinkle that with garlic powder.  (You could dress it if you want to.)

Once that is ready, I cook up the prawns.

My fish shop has these amazing prawns that are already peeled and have garlic and parsley added.
I use those but you can use anything you like.

So, I cook up the prawns and then pop them on the top of the salad.

Done.

Chimichanga Lettuce Wraps

i read somewhere just the other day that anything you can wrap in a tortilla, you can wrap in lettuce. i read this at the right time, since we're not currently eating tortillas ! i decided to give it a try and tonight we had chicken chimichanga meat wrapped in lettuce, and it was DELICIOUS ! a hit with the whole family !



here's what i did ...

mix the following items together in a bowl ...
2 chicken breasts, cooked (we grilled them) and diced
1 jar salsa, I use a medium
1 tsp ground cumin
a bit of fresh oregano, maybe 2 or 3 teaspoons of leaves (or 1 tsp if using dried)
1 cup shredded cheddar cheese
4 finely chopped green onions (spring onions)
1 tin of tomatoes

throw that in the microwave for just a couple minutes to heat it all up. it doesn't need to be piping hot, just warm ...

i put that bowl on the table, about 1/2 a head of iceberg lettuce pulled apart, the greek yoghurt (you could use sour cream if you prefer) and some hot salsa for Rory.

done.

wrap 'em up and eat 'em.

oh, and make sure you have plenty of napkins on the table ... these bad boys are MESSY !



Fuji Chicken Salad



This salad is incredibly tasty. And so simple. And only 9 ingredients ! (including a homemade salad dressing) I had this salad for lunch today, I wish there was more so I could have it for dinner tonight. Yeah ... THAT's how good it was !

I made individual salads, one for me and one for Rory. Here is the ingredient list for a single salad ... adjust as necessary.

Salad:
1 cup ice-burg lettuce, chopped
1 cup wombok (chinese or napa cabbage), chopped
1 chicken breast, cooked & sliced (we seasoned with salt/pepper then grilled ours on the BBQ)
1 Fuji apple, thinly sliced

Dressing: (this was enough dressing for two salads)
1/4 cup caramelised balsamic vinegar (use a good one !!)
1/8 cup olive oil
1 tsp Italian herbs
salt and pepper

Here come the complicated instructions ...
1. Put the dressing ingredients in a jar with a lid and shake 'em up.
2. Put salad ingredients into a bowl or onto a plate.(or into a tupperware for lunch, like I did !)
3. Top with dressing.

This burger is HUMONGOUS ... but so worth eating. I couldn't finish mine but I loved every bite I got in !!

Here's what's on it ...
Three pieces of white bread ... buttered and pressed in sandwich press
Iceberg lettuce
2 beef patties
1 piece swiss (we used jarlsburg) cheese
1 piece cheddar cheese
dill pickle slices
ketchup, mustard and mayo
diced onion

Just watch out ... you have to hold onto it with two hands ... otherwise this happens ...

BLT




I'm sure you all know how to make BLT's but just in case ...

cook bacon
chop tomato
tear lettuce
toast bread
or not
spread with mayo
add lettuce
tomato
bacon

Eat and enjoy.
You might as well make yourself two ...
We usually do !


Black Olive Salad


This has been my favorite salad for my whole life !
So simple. So delicious.
This is why my Mom mails Italian Dressing mix to me !!
(can't buy it in Australia and the ready made ones just aren't the same !!)

I use iceberg lettuce because it is so crispy !
Sliced black olives but only because they are the only ones I can buy pitted.
Onion. Thinly sliced.
Italian Dressing.

DONE.

Chicken Lettuce Wraps

I think this might be the last one I have to transfer from my Simple Beauty blog !!



What you need :
500g (1lb) chicken mince (can you buy chicken mince in the States ? If not, just grind some chicken breast in the food processor.)
1 tbls garlic
6 spring onions (scallions), chopped
1 tbsp cider vinegar
2 tbls sesame oil
1 tbls gresh ginger
8 oz can of water chestnuts, drained, chopped ( the water chestnuts, not the can ! )
2 tbls hoisin sauce
3 tbls soy sauce
1 tbls cornstarch
1 oz asian vermicelli rice noodles ( you know, the clear ones ... )
head of iceberg lettuce ( or two depending on size )

How to make it :
Heat oil on med/high heat. Add ginger, garlic, spring onions. Cook for a minute, add chicken. Cook 3 or 4 minutes. Add water chestnuts. In a bowl, mix soy, hoisin, vinegar, cornstarch and 1/4 cup water. After chicken browns, add mixture to pan. Boil and let thicken. Readuce to low and simmer 1 min. Prepare vermicelli rice noodles according to package directions and add at the end. The ones I buy only require you to pour boiling water over them and let set for 5 minutes. These are not essential to the recipe ! You could even leave them out !

How to serve it :
Pull apart lettuce leaves. Put in big bowl and cover with ice water. I put out a big bowl with the chicken mixture, and the bowl of lettuce leaves in the ice water. When ready to eat, scoop a small amount of hot chicken mixture into lettuce leaf. YUM !
