"Waldorf"-Style Chicken Salad


For 2 people (easily doubled or tripled or whatevered):

2 cups diced cooked chicken
1 large apple, cored and diced
dash lemon juice
1 large stalk celery, diced
1/4 cup walnut pieces
3/4 cup yogurt (preferably Greek)

Toss apple pieces with lemon juice to prevent browning. Add remaining ingredients and mix.

Serve as is, in pita pockets, on bread, however you like. Wonderful (and easy) for supper on a hot summer day!

This is practically just like the recipe we use, I love the crunchy apple taste. Super yum.
