Mariposa Palmiers

The other night I made fruit salad for dessert but we wanted something to go along with it. El had one piece of puff pastry in the freezer so we made mariposas!  You may know them as Palmiers.  I don't know why we called them mariposas growing up ... maybe because they look like butterflies?

Anyway ... these are super easy. 

Preheat oven to 200C/400F

You will need:
Puff pastry
Sugar, we used caster (fine) sugar

Baking tray lined with baking paper.

Sprinkle sugar onto a flat surface.  Lay puff pasty on top of flat sugared surface. Sprinkle a good layer of sugar on the top of the puff pastry.  Roll pastry from each side to meet in the centre.  Slice into 1/2 inch slices.  Lay slices on baking tray.  Bake anywhere between 10-15 minutes.  Keep and eye on them though ... burned sugar is not nice. 

Baked Brie


We had this at a friends house last year on Christmas Eve and I've wanted to make it ever since !  I don't think they did the jam though ... that was the addition of the friends we made this with last night !

This was so easy ! Not to mention DELICOUS !

All you need is:
1 sheet of puff pastry, thawed
1 wheel of brie
strawberry jam
crackers

All you do is:
Put the brie on top of the pastry. Top with strawberry (or your choice of)jam. Fold the pastry up to wrap the jam covered brie. Bake in 400F/200C oven til pastry is golden. We did it for 25 minutes last night ... I might try a little longer next time. 

Serve with crackers or fresh slices of crusty bread.
SO stinkin' yum !

Chicken, Proscuitto, Pastry, Cream Cheese ... oh yeah !



so ... a few weeks ago, i found this recipe for pastry wrapped chicken
not only was it wrapped, it was stuffed ! i HAD to try it !!

but ... i changed it a bit ...

2 chicken breasts
2 frozen puff pastry sheets
a couple spoon fulls of cream cheese
prosciutto, 4 pieces (or more if you like)
parsley
1 spring onion, chopped
1 egg
pepper
salt

Mix together the cream cheese, parsley, spring onion, salt and pepper.

Slice each chicken breast in half through the side of it lengthwise, so it folds open. Put half the cream cheese mixture into each chicken breast and fold the chicken back over itself.

Wrap each breast in 2 pieces of prosciutto. Wrap prosciutto wrapped chicken in puff pastry.

Beat the egg, and brush the top of the pastry with the egg.

Pop them in a preheated oven, and bake at 400F (200C) for 30 to 35 minutes. (or until chicken is cooked)
