Sundried Tomato Hummus

We went to visit some family a few months ago and my sister in law served the most amazing hummus that I've ever eaten.  It was sundried tomato hummus and she just made it up.  I asked her to list out the ingredients to the best of her recollection and I've been playing with it since.  This last batch I made was the closest but still not as amazing as hers!  But .... I like it well enough to share and well enough that I'll make it this way from now on. 
 
Don't be alarmed by the vague measurements, just taste as you go.  Put into a food processor the following ingredients.

Chickpeas (garbanzo beans), 2 cans, drained
Garlic, 4 cloves, roughly chopped  (more or less, depending on who garlicky you like things)
Juice of one small lemon
Honey, 1 teaspoon
Sun dried tomato, I used a small jar (again, adjust to taste)
Some but not all of the oil in the jar of SD tomatoes
Soy sauce, start with 2 teaspoons and adjust to taste.  I did end up adding a bit more the other night.
Sweet paprika, 2 teaspoons (and you got it ... adjust to taste)

Whiz it up in the food processor.  I let it go for a few minutes until everything is pretty well smooth.  There were a few small chunks left in mine.  I didn't mind.  You can adjust that to your preference.  Taste it, if you think it needs salt, add a little bit more soy sauce.  Whiz a bit more. 

Serve with crackers of your choice.  I used plain and seaweed rice crackers.

Agnolotti with Sundried Tomato Tapenade

 

This is a fast throw together dinner that is super yummy !

I use the family pack that serves four of the Ricotta and Spinach Agnolotti.  Cook per package instructions.

As well, you'll need:
Cottage Cheese, 250g
Sundried Tomatoes, 150g
Black Olives, to taste (maybe a tablespoon ?)
Capers, also to taste (maybe a teaspoon or two ?)
Baby Spinach, 60g
Parmesan Cheese, to be grated on top

I used to be able to get a sundried tomato tapenade that made this even simpler, but I haven't been able to get that lately, so I make my own.  Doesn't take long.

I use a stick blender to blend the sundried tomatoes, olives and capers.  Just keep tasting it til it tastes yummy.  

Mix the tapenade and the cottage cheese.

Drain the pasta, put back in the pan and stir in the cottage cheese/tapenade mixture.  Throw in the spinach ... it will wilt.  Serve and top with Parmesan cheese. 

So easy. 

So yummy.

40 Clove Garlic Chicken Pizza

We had leftover 40 clove chicken the other night and I decided to try a little experiment. Seriously ... I think that's pretty much all I do these days ... experiment ! I wanted to try and change up the dough a bit. Last time I made it, I found it a bit hard to roll out and I had read that adding a small amount of gluten flour will help with elasticity. So ... I made my dough like this ....

1 and 1/3 cup water
2 TBLS honey
2 TBLS olive oil
2 cups whole wheat flour
2 cups whole wheat spelt flour
1 TBLS gluten flour
3/4 tsp salt
1 and 1/4 tsp yeast

This dough was really nice. It is much wetter and required more flour on the surface to roll but the taste was great ! I think I'll try adding half as much gluten flour next time and see what that does. I'll tweak it til it's perfect !! :)

Here's the pizza before we put the mozzarella on top ...



The toppings went like this :

Tomato Sauce:
2 TBLS tomato paste
1 TBLS thickened cream
Leftover garlic and onions from the 40 clove garlic chicken

Mix and spread on dough.

The Rest of It:
One small potato, unpeeled, uncooked and thinly sliced
Leftover 40 clove garlic chicken, maybe we used about 1/2 a cup ? Do it to your liking.
A handful of fresh baby spinach leaves
A dozen or so kalamata style olives
Three homemade sun dried tomatoes, defrosted earlier and cut into chunks
Red onion, sliced
Spring onion, chopped
Camembert cheese, slivered

And then top with mozarella cheese. Bake in oven 15/20 minutes on 400F/200C.




ABSOLUTELY DELICIOUS !!

Raw Lasagna on Big Honkin' Mushrooms

These were so yummy. I have done this raw lasagna as a dip before but wanted to do it as part of a main meal. This worked really well. I just got some humongous portatbello mushrooms, grilled them in my sandwich press right before we were ready to eat, spooned to (already prepared a few hours earlier) lasagna onto the top. EASY ! YUMMY !





1/2 a zucchini, finely sliced
2 cups tightly packed fresh spinach, processed til finely chopped
1/2 cup avocado, mashed
AND
1 ripe tomato, seed and chop (1/2 cup)
1/2 cup homemade sun dried tomatoes
1/2 cup red bell pepper
2 tbls olive oil
1 tsp oregano
1 tsp basil
1 clove garlic
1/2 tsp salt

Process everything under the AND ... til smooth.

Layer zucchini, spinach, avocado, tomato sauce. Do a few layers. I think I got three in a rectangular tupperware and four or five in a square tupperware ... It's best if you leave it set a few hours in the fridge before you eat it. The flavors really develop !

Sun Dried Tomatoes

One of the things I can't get without preservatives is any sort of sun/semi dried tomato. Total bummer. There are just so many things that taste so much better with them than without ! Luckly for me, Shay had a solution ! Here you go !

You'll need a bunch of tomatoes ... I used Roma Tomatoes and I bought two bags. Cut them in half and lay them on a baking tray lined with al foil to make cleanup a breeze !



In a bowl, mix 1 tsp salt, 1/4 tsp pepper and two tablespoons of fresh herbs of your choice. I used rosemary and thyme. Brush your tomatoes with olive oil then sprinkle with herbs.



Pop 'em in a preheated oven ... 250F / 120C ... and roast them for about four hours. She said they should be dehydrated but still meaty when they are done.



I don't know if mine are exactly right (according to this recipe) but they sure taste GOOOOOOD !



And I froze them in 1/2 cup measurements ... so easy to pull out and use in recipes !!!
Mmmm ... we had them on pizza the other day and wow ... what amazing flavor they added !!



Eggplant Parmesan

Eggplant Parmesan

1 cup Italian-seasoned bread crumbs
1/2 cup egg substitute
1 medium eggplant, sliced into 6 (1/2-inch) rounds
1 tablespoon olive oil
1 small yellow onion, sliced
3 cloves garlic, crushed and then minced
1 teaspoon crushed red chili flakes
2 (15-ounce) cans crushed tomatoes
1 tablespoon tomato paste
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped fresh basil leaves
1 cup shredded part-skim mozzarella
1/2 cup grated Parmesan Preheat oven to 350 degrees F.

Place bread crumbs on a shallow plate. Pour egg substitute onto another shallow plate. Place a wire rack on top of a cookie sheet. Take a round of eggplant, dip it into the egg substitute until fully covered, and then drag through the bread crumbs until completely coated; transfer to a wire rack. Repeat for each round of eggplant and then bake in oven for 15 minutes.

While eggplant is baking, heat olive oil in a 5-quart nonstick saucepan over medium-high heat. Add onion and garlic and saute until soft, about 1 1/2 minutes. Add the chili flakes and stir to incorporate. Add the crushed tomatoes and tomato paste and stir to blend completely. Bring to a simmer and simmer for 5 minutes. Season with salt and pepper, stir in the basil, and remove from heat.

Remove eggplant from oven and leave oven at 350 degrees F. Line the bottom of a medium-sized casserole dish (about 13 by 11 inches) with the eggplant rounds. Pour the tomato sauce over the eggplant. Top with the cheeses. Bake for 30 minutes until cheese is soft and bubbly. Remove from oven and let stand for 5 minutes before serving.
