Baked Potato Bar

This is such a quick an easy meal.
I did it for the kids the other night.

All you do is ...
Bake the potatoes.
You know, wrap 'em in tin foil, into a hot oven for 30 minutes or so.
Have a bunch of stuff out to top them with.
I cooked a bit of bacon.
Cheese and sour cream and the kids were set.

Normally I'd do beans, salsa, avocado as well ...
Olives
Mushrooms
Onions and Chives
Garlic

You name it ... it can go on top of a baked potato !!

So you just made up my mind about lunch! Two small potatoes in the toaster oven now! :)

Have you ever "baked" potatoes in the microwave? I can't tell a difference in taste when I get all the condiments added. I poke a fork about 4 times round about each potato and then allow 5 minutes for each potato I'm cooking. About halfway through I turn them over. It's quicker if you aren't doing too many at a time!

My mother-in-law used to "bake" potatoes in the microwave. They were pretty good. I just don't have a microwave, and LOVE my toaster oven! :)
