Bonnie's Fried Rice

I love fried rice. In an attempt to re-create the fried rice at the Negishi Club, I came up with this. Tonight I made Chicken Fried Rice. I'll just give you the basics. You can add whatever meat you want ... and whatever veggies. Make it your own ! :)

Step 1 :
Cook your rice. It's best if you make it the night before but I rarely remember to do that ! I use a rice cooker and I make 2 cups for our family of four.

Step 2 :
Cut up what you want in it. I ALWAYS have garlic ( lots of it ) and a finely diced onion. Carrots, zucchini, red or green capsicum ( bell peppers ), mushrooms, peas, edamame, asparagus ... really ... whatever you like and whatever combinations you like ! Tonight I just threw in whatever we had which was carrots, frozen peas, bamboo shoots, and baby corn.

As for the meat. You don't have to have meat. Most times I don't. Tonight, since we're eating through the freezer and there was a chicken breast in there, I used that. Sometimes I use prawns. ( shrimp )

Step 3 :
Heat oil in pan. Here's one of my secrets. I always use sesame oil for my fried rice. Love the flavor it gives ! And the smell ... mmmm mmmm !! Use your common sense as to how long each thing needs to cook for and add them as you think ... I always start with garlic and onion, add the meat and then the veggies in order of what needs to cook the longest for the tenderness we like them.

Step 4 :
Add the rice. Put soy sauce on it. ( to taste )

Step 5 :
Once you've let the rice heat a bit ... make a hole in the middle of the pan and crack an egg into it. Use your spatula to stir it into the rice. I usually add two eggs ... but separately. Once the egg is cooked, and the rice is heated through, sprinkle with slivered almonds.

Step 6 :
Serve, eat, enjoy !!

I do mine almost exactly like you! I like mine meat-free, and made with brown California basmati rice. My Mom used to make it with bacon and just used the grease from the bacon to stir fry the veggies. I do the well in the middle for the egg too! I've never had slivered almonds on mine. Sounds yummy.
